Watermelon & Feta Salad recipe

Ingredients:

  • ½ mini watermelon
  • 80g feta cheese
  • 35g spinach
  • 45g cucumber
  • 80g canned black beans
  • 15ml balsamic vinegar
  • ½ lime
  • 5g fresh basil leaves
  • 15ml extra virgin olive oil
  • Salt and pepper (to taste)

Method:

  1. Cut the watermelon in half and then into bite-sized cubes, removing the rind and seeds. You can use a melon baller for a fun, uniform look if you prefer.

  2. Chop the cucumber into small cubes, try to get the pieces as small as possible.

  3. In a large bowl, combine the watermelon, spinach, cucumber, and black beans. Crumble up the feta cheese and gently toss everything together.

  4. In a jug, mix together the olive oil, lime juice, balsamic vinegar, salt, and pepper. Adjust the seasoning as needed.

  5. Wash and finely chop the basil leaves into little pieces, then add to the jug and stir it in.

  6. Drizzle the dressing over the salad and toss gently to ensure everything is well-coated.

  7. Refrigerate the salad for about 5-15 minutes to allow the flavours to blend and the salad to chill for an extra refreshing bite.

  8. Serve the salad in bowls. Garnish with additional basil or mint leaves for decoration, and enjoy!
