Ingredients:

  • 350g plain flour
  • 230g butter (softened)
  • 165g granulated sugar
  • 100g light brown sugar
  • 1 medium-large egg
  • 1 teaspoon baking soda
  • 150g chocolate chips
  • A splash of peppermint extract
  • A splash of vanilla extract
  • A pinch of salt

Method:

  1. Start by mixing the butter, salt, and sugars together in a bowl until smooth and creamy.

  2. Beat in the egg, then thoroughly mix in the vanilla and peppermint.

  3. Sift the baking soda and flour into the mixture. Slowly fold them in until everything is well combined, then add the chocolate chips and mix evenly throughout the dough.

  4. Scoop out small amounts of dough and roll them into balls. Place them on a baking tray lined with parchment paper, leaving a decent amount of space between each cookie.

  5. Refrigerate the dough for 30 minutes to 1 hour to help the cookies maintain their shape and not spread when baking. Once chilled, gently flatten each dough ball with the palm of your hand.

  6. Preheat your oven to 200°C (180°C fan assisted), and bake the cookies for 10-15 minutes.

  7. Let the cookies cool on the tray before transferring them to a wire rack to cool completely, then enjoy!
