Classic Banana Bread recipe

Ingredients:

  • 250g plain flour
  • 150g light brown sugar
  • 115g butter (softened)
  • 4 bananas
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 180g chocolate chips (optional)

Method:

  1. Preheat the oven to 170°C (150°C fan assisted).

  2. Mix the butter, sugar, and vanilla extract together in a bowl until smooth and creamy.

  3. Beat in the eggs one at a time, then mash the bananas with a fork and stir them into the mix.

  4. Gently fold in the flour, baking soda, and salt. The batter should be thick but pourable.

  5. Grease a standard-size loaf pan (or use parchment paper) and spread the batter into the pan.

  6. Place the pan in the bottom rack of the oven. At the halfway point (30 minutes), loosely cover the pan with aluminium foil to prevent the top from getting too brown.

  7. Check the bread is fully baked by pushing a butter knife into the centre. If it comes out clean, then the bread is done.

  8. Let the bread cool in the pan for about 15-30 minutes, then transfer it to a wire rack and let it cool until ready to be served.
