Lemon, Viola, and Mint Iced Tea recipe

Why this drink is special

This iced tea is unique because of its use of viola-infused water, which produces a vivid blue colour when steeped in hot water. As you mix in the citrusy lemon juice, the colour transforms into a beautiful purple hue, creating a visually striking drink.

Recipe Details

Ingredients:

  • 800ml water
  • 80ml elderflower cordial
  • 40g mint leaves
  • 20g viola petals
  • 8 tbsp sugar
  • 1 lemon
  • Ice cubes

Method:

  1. Prepare some ice cubes in the freezer (add flower petals and mint for a visual flair if you wish).

  2. Boil the water in a kettle. Once boiled, put half of it into a glass measuring jug and stir in the viola petals. Let the water steep for about 5-7 minutes, or until the water has taken on a bright blue hue. Strain out the petals and set the viola-infused water aside to cool.

  3. In a separate jug, combine the fresh mint leaves, sugar, elderflower cordial, and the rest of the boiled water. Stir the water to mix in the sugar and help the mint leaves release their aromatic oils.

  4. Once both halves are chilled, squeeze the lemon juice into the mint and elderflower mixture.

  5. Fill a drink glass with the ice cubes and pour the mint and elderflower mixture into the glass.

  6. Carefully pour the viola-infused water on top of the mint mixture, using the back of a spoon to gently guide the water and keep the layers separate. This creates a beautiful layered effect in your glass.

  7. Enjoy your drink, or garnish it with a few fresh mint leaves and a slice of lemon for a decorative touch!
